This churrasco recipe is based on Argentinian cuisine: it is prepared on a plancha or grill and topped with a spicy and garlicky chimichurri sauce.

Miami's #1 Steak Skirt Steak Grilled aka Churrasco Recipe!
Serious Mealtimes / Amanda Suarez
Churrasco is a word that can describe a variety of cooked meat dishes throughout Latin America Brazil Spain and Portugal. Some of these dishes are not practical to make at home. I eat at Brazilian churrascarias quite regularly and as much as I love them I would be hard-pressed to imagine setting up the multiple spits of meat required for the true Brazilian experience. In other cases however it doesn’t have to be quite so elaborate.
Take this simple recipe for churrasco steak that is quickly grilled or seared and then topped with chimichurri sauce like you might see in Argentina or Uruguay. This type of churrasco recipe often calls for skirt steak but not always. You can use other thin quick-cooking steaks. For example when I developed this recipe I butterflyed a boneless short rib to make it about the same thickness as a skirt steak (you’ll see it in some of the photos in this recipe) just as an example of how you can do this for other types of steak. You can see the butterflying technique in the photo below.
