Grilled shrimp skewers with chermoula sauce
Remember when you were a kid learning to ride a bike and you realized that riding a bike on the sidewalk wasn’t all that different from riding a bike up a hill or down the street or on the playground and all of a sudden you just wanted to ride your bike everywhere? Well that’s what happened to me except instead of riding a bike I learned to grill and instead of riding a bike I learned to cook shrimp and instead of riding a bike on the sidewalk I learned to season garlic and lemon and instead of riding hills and streets and playgrounds I learned new sauces and herbs and spices and instead of riding my bike everywhere I ALWAYS ate shrimp.

As I discovered earlier the real key to great grilled shrimp is to season them with salt and baking soda (so they stay nice and plump) place them tightly on a couple of skewers to reduce their surface area and ensure they are thoroughly dry before grilling and grill them at insanely high heat. This method results in perfectly grilled shrimp that you can then dress however you like.
