Oysters Rockefeller Recipe | A delicious and easy to make appetizer!

After discovering that non-Antoine Rockefeller recipes are often just bad covers of hit songs I decided I wanted to come up with my own riff that paid a truly delicious tribute to the original. Reading bad imitation recipes that combined bivalves with wilted baby spinach cream and cheese didn’t exactly whet my appetite but the combination of deep greens and dairy reminded me of a dish that does: Mexican rajas con crema.

Rajas are the dream vegetarian taco filling—strips of roasted poblano peppers simmered with onion crema and melted cheese. (Hey if you want wilted baby spinach on your baked oysters there are plenty of recipes out there to make you happy.) Before we get started let's be clear that there is nothing "authentic" about this recipe. If my version of oysters Rockefeller is by no means the genuine article then this variation on it is certainly not a guide to making real rajas. But it sure is tasty.
