I first heard about sofrito when I saw Daisy Cooks on PBS and have had little reason to deviate from the recipe since. This Puerto Rican version of sofrito—there are many different geographical variations—is a fresh blend of onions cubanelles garlic cilantro ajices dulces* cilantro culantro* tomatoes and red pepper quickly whizzed in a food processor into a fine paste. What you’re left with is enough sofrito to seriously flavor meals for weeks.
*While culantro and ajices dulces are easy to find in my area Daisy says not to worry if you can't find them. The ajices dulces can be omitted; just replace it with another handful of cilantro if you can't find culantro.
