This isn’t the first kale black-eyed pea and sausage soup I’ve made and it probably won’t be the last. The ingredients are a natural fit both in flavor and nutrition. This one made with smoky andouille sausage and pork belly with tender beans and kale braised in a tangy broth is the kind of dish that will get you through the winter without ever having to eat anything else. Not that you’d want to but you could.
I think I've said this before: I'm a pretty lazy person. Not in the "I think I'm just going to sit on my ass and watch TV all day" kind of way but in the "if option A and option B yield similar results and option A is way easier than option B I'll choose option A" kind of way. I'm always looking for shortcuts and easier routes to delicious food. While I love diving into an all-day cooking project I do love simple recipes like this that maximize the deliciousness-to-work ratio.
