These bonbons are filled with a boozy vanilla caramel that oozes out when you bite into them. A little pinch of sea salt makes all the flavors sing.

How it's made: Salted Caramel Candies
Serious Eats / Lauren Weisenthal
This Valentine’s Day I won’t be spending my money on Hallmark or Hershey’s or even Jacques Torres. Instead I’ve invested in a gift for myself that I’ll continue to give to others for years to come: an acrylic candy mold and some high-quality dark couverture chocolate. With these items I can create custom chocolates to suit my significant other’s (or my) tastes.
The great thing about making your own chocolates is that with a little practice you can achieve an absolutely beautiful finished product. Properly tempered chocolate poured into a prepared mold will always produce pieces that are smooth and shiny like those found in glass cases in chocolate shops. But unlike in a chocolate shop when you make your own chocolates you have complete control over the flavors and textures.
