I’m not sure who was the first to stuff sweet fatty and tender chashu-style braised pork belly into a lily-white steamed Chinese bao bun but they’ve certainly caught on like wildfire. Virtually every ramen shop in town has some variation on the theme from the braised Niman Ranch pork buns with hoisin scallion and cucumber at Momofuku Noodle Bar to the charred pork neck buns with sweet Japanese mayonnaise at Hide-Chan.

It makes sense because all of these ramen places already have braised pork in their ramen. All you need is a tender steamed bun and a few sauces and bam you're in for a win.
