For the uninitiated McVities are a type of digestive biscuit a pseudo-healthy biscuit/cracker hybrid made with a serving of wholegrains making them a close relative of the American graham cracker. As I noted in my recipe for McVitie's-style chocolate covered digestive biscuits although they are sold plain the arguably tastier type is covered in chocolate. While I've long thought the milk chocolate variety tastes like Kit Kats in biscuit form the dark chocolate McVities will always be my OTP.

In this vegan version that uses coconut oil in place of butter there’s a flavor boost from toasted sugar which helps to bring out some of the toasted notes that lactose (a milk sugar) can develop from browning. For my non-vegan version I knew I could go straight to the source with fresh or powdered milk.
